The usual manufacturing process of spices, tends to eliminate the oils which add to the aroma, colour and taste of the spice. At Keya, which manufactures Khada Masala, grinding is carried out at controlled room temperature, mitigating the damage caused by heat & the spices are left in coarse form instead of fine powder, enabling outer skin of the spice to trap volatile oils inside and provides better protection against external forces.
